Learning Objectives
After completing this course, students will understand:
- Definitions of toxicology and toxicity
- The role of other basic sciences and disciplines in the genesis of food toxicology
- Different types of toxic responses
- How toxicants are classified
- Sensitivities of special populations
- Toxic effects of specific food toxicants
- Mechanisms of action of specific food toxicants
- Food allergies versus food toxicants
- Mechanisms for interactions between multiple food compounds and/or drugs
- The issues related to presence and management of food toxicity and potentially toxic compounds in our food supply;
- Why absolute safety of our food supply (the certainty that the general public seeks) may no be achievable from the toxicological standpoint;
- The difficulties/problems, which beset the science of toxicology, and how this in turn is reflected in public attitudes and national policy on the safety of our food supply
- An awareness about risk assessment and its importance
