Introduction and meaning

Food extrusion is not totally new. The extrusion cooking has become a well established industrial technology with a number of food and feed applications.

Meaning:

  • Extrusion is the operation of shaping dough like material or a plastic by forcing it through a die.
  • Food extrusion is a process in which a food undergoes a variety of conditions of mixing, heating and shear through a die which is designed to form and/or puff dry the ingredient.
  • Extrusion is a multivariable unit operation i.e., mixing, shearing, cooking, puffing and drying in one energy efficient, rapid continuous process.
  • It is a combination of high temperature, high pressure and high shear.
