Chutneys

Meaning: Is a relish that is hot spicy, sweet, sour, firmer than a jelly, less sour than a pickle, not as sweet as jam, hot and peppery with ginger and can be eaten with blend and curried foods.

Types: Raw mangoes, tamarind, tomatoes, apple, gogu and any other fruit can be used for chutney preparation.

Process of preparation: The fruits finely cut are mixed with sugar, salt and spices viz, ginger and cooked to viscous consistency and acidity is adjusted with vinegar. The shelf life is one year.
