Examples of Flavour Improvement and Specialty Combinations

The flavour, quality and eye appeal of soup may be improved by the use of a number of devices. These include:

  • Mixing of one kind of soup with another compatible variety (pea and tomato).
  • By the addition of spices, herbs, wine, cheese and attractive, tasty garnishes.

Examples:

The following examples are based on the use of soup packed in 48 oz containers. Quantities of suggested additives are omitted, as the final flavour range should be determined by prior testing.

  1. Canned Split Pea Soup:

    • Whip in chili powder and instant garlic.
    • Whip in onion flakes, celery flakes, instant minced garlic and black pepper.
    • Combine with tomato soup and add a quantity of sweet cream.
    • Season with onion and celery salt.
    • Whip in ground mace, cloves and savory. When heated sprinkle on onion salt.

  2. Tomato Soup:

    • Whip in ground cloves, white pepper, all spice and basil leaves.
    • Whip in mixed vegetable flakes.
    • Sprinkle caraway seeds over the hot soup prior to serving.
    • Add crumbled oregano or basil for an interesting flavour variation.
    • Whip in instant minced onion, chives and add one can of cream of corn soup.

  3. Cream of Mushroom:

    • Whip in instant minced onion, ground nutmeg and garnish with paprika.
    • Combine with chicken noodle soup, add water or milk and a small amount of poultry seasoning.
    • Combine with cream of corn soup.

  4. Chicken Soup:

    • Whip in instant garlic powder, celery seed and instant onion powder.
    • Combine with tomato soup, rice, freeze- dried chopped onions and dried celery.
    • Combine with celery soup.

  5. Vegetable Soup:

    • Whip in instant onion and garlic powder, ground all spice and bay leaf.
    • Combine with chicken soup and add chopped parsley.
    • Add milk, pepper, salt, parsley, butter and flavour for thickening.
    • Combine with pea soup and add milk.

  6. Bisques:

    • Combine clan chowder, chicken gumbo and enrich with cream.
    • Combine, tomato soup, frozen lobster meat and enrich with cream. Season with paprika, onion and celery flakes, salt and pepper.
