Introduction

Deep fat frying is an old and popular process which originated and developed around the Mediterranean area. Today numerous foods are fried all over the world.

Definition

Deep fat frying is a process for cooking of foods, by immersing them in an edible fluid (fat) at a temperature above the boiling point of water. The temperature can range from 130-190ÂșC.
