1.2.1.4. Vitamins and Minerals

In general, fish meat is a good source of vitamin B and in the case of fatty species A and D vitamins. Some freshwater species such as carp have high thiaminase activity so the thiamine content in these species is usually low. Fish meat is regarded as a valuable source of calcium and phosphorus in particular iron, copper and selenium in general. Saltwater fish have a high content of iodine.
