There shall be plentiful supply of potable water with suitable chlorinating system allowing the residual chlorine content of the water at required level of 2ppm. If the water used for processing is from sources other then protected water supplies, a certificate of portability of the same from the CIFT, Cochin or institutions approved by the Agency shall be produced.

Water used for processing purposes must be treated as follows. Biological filter, carbon filter, chlorination and UV radiation. Water thus treated are stored in overhead tank and used.

If non-potable water is supplied for boiler and other auxiliary service, there shall be no cross-connection between the auxiliary water system and the system carrying potable water. If the water is used from a storage tank, the tank shall be of sufficient capacity and shall be protected from extraneous contamination. The storage tank shall be cleaned at least once in a month. The minimum available chlorine content of 2 ppm in water used for processing shall be maintained.

Ice shall be made from potable water only and shall be so maintained, handled and stored as to protect it from contamination. If ice from external sources is used it shall be ensured that the same is made from potable water and not contaminated. Ice crushing machine made of stainless steel shall be provided and the same shall be kept in good sanitary condition.
