Potato flour There are numerous varieties of potato flour, from the high-grade varieties when reconstituted give satisfactory mashed potato, to the cheaper varieties, which are suitable only for use as admixtures in food products. Potato flour can be used in short pastry and sponge foods, where it helps to improve the shortness of the products and to maintain moistness in the sponges. When incorporated in bread formula it yields soft and long lasting breads. It is also useful to thicken sauces and add higher volume to your bread making. Potato flour is made from ground whole, dried potatoes and is used in combination with other flours. It imparts a mild potato taste to foods when incorporated. Potato flour can be incorporated up to 25 to 30 per cent in wheat flour insoft rolls and dessert style bread recipes.
