Puffing/Popping

  • Millets such as sorghum, bajra, little millet, foxtail millet and ragi have been popped and used in preparation of infant weaning foods.
  • The puffed material has a low bulk density and pleasing texture and distinct appealing flavor.
  • Popped millet flours can be bases for snack food products and can be used in development of breakfast and specialty foods.
  • Roasted puffed grain powder can be prepared using millet grains. The millet grains are soaked in water for 12-24 hours or lukewarm water for 4-6 hrs. then the grains are roasted partially. Then flattened, dried, stored and usually deep fat fried before consumption.
  • The dried millet flakes can be powdered and used as a weaning food.
