Soups: Its importance

  1. Soups have been served at the beginning of all formal dinners and at many other times as well.
  2. The serve two purposes viz. stimulate the appetite and provide nourishment.
  3. Clear soups are one of the ways of introducing liquids when only a clean liquid diet is used. They have negligible caloric and protein value but on the other hand they contribute sodium chloride, potassium and small amounts of other minerals.
  4. On the other hand, those prepared with meat stock are rich in extractives, full flavored and stimulating to the appetite. Moreover, these soups have a definite value as stimuli to the secretary cells of the stomach.
  5. Some soups are rich and highly nutritious, where chunks of meat, vegetables, rice or barley, macaroni and noodles are added. They may contain milk in the form of white sauce or grated cheese.
