Toxicants Found in Foods

  1. Food infections: are those diseases in which the bacteria present in food at the time of eating grow in the host and cause the disease
  2. Food Intoxication: are those diseases in which bacteria grow in a food producing a substance therein which is toxic to humans and other warm-blooded animals.
  3. Food Poisoning
    1. Chemical poisoning
    2. Intoxications from plant or animal tissues
    3. Microbial intoxications from mold (mycotoxins) aflatoxin, patulin and ochratoxin.
    4. Microbial intoxications from bacteria (Staphylococcal intoxication

by Staphylococcus aureus and botulism by Clostridium botulinum

Intoxication: Ingestion of active toxins produced by microorganisms in FOODS, can be harmful even though the microorganisms have been killed or inactivated.
