5.1.1 Proteins

The word protein is coined from the Greek word ‘Protos’ meaning of “Prime importance” by Dutch chemist Gerardies Mulder in 1838. Proteins are very large molecules formed by the linking of amino acids in chains. These chains twist, fold, or coil into different shapes in forming peptides and protein. They are consumed together in hundreds of grams per day, depending upon body weight, age and sex. Proteins present in the animal body perform various functions that include serving as carrier of vitamins, oxygen, carbon dioxide plus structural, kinetic, catalytic, and signaling roles.
