Turmeric oleoresin

• This is a highly viscous, orange-brown product containing 30-35% curcumin, 15-20% volatile oil and has a characteristic turmeric aroma.
  
• Turmeric oleoresin is prepared by the extraction of a good quality turmeric powder with solvents like acetone, alcohol or ethylene dichloride and subsequent desolventisation to meet the specifications.
  
• Since turmeric oleoresin is highly viscous, it is mixed with dilutents like propylene glycol or vegetable oil, to obtain a homogenous pourable product.
  
• Though such products have a lower colour value, they are more suitable for specific end uses.
  
• New-generation products based on turmeric oleoresin include spice emulsions/aqua resins and encapsulated water dispersible powders with advantages like dispersibility in oil or water, and ease of application.
  
• An established curcumin colourant has been prepared by spray drying turmeric oleoresin with an organic acid, a buffer, a dispersant and an encapsulating material.
  
• Also, a powdered colouring agent, wherein curcumin is completed with gelatin in acetic acid, has been reported.
