Live Oysters: Oysters should be carefully harvested.  If carefully handled, oysters can survive for one week out of water. After harvesting, oysters should be kept cool and humid.  Holding tanks with recirculation seawater may be used for temporary storage and the temperatures should be between 1 and 10°c. Oysters should be carried and stored with the cupped half of the shell downwards.  Stored this way their natural juices are retained, since they easily lose fluids.  Especially if the shell is damaged the oysters should be sold as soon possible after harvesting.

Commercial air shipment of pre chilled oysters is usually in polystyrene boxes or waxed cartons with polyethylene inner lining.  The ultimate choice depends on the value of the oysters, means of transport and the time required for shipment. Healthy oysters sound solid when tapped, and, either remains tightly closed or shut quickly when handled.
