EVISCERATION

  • An opening is made at the cod, the first and second finger are inserted to guard the points of knife and continue the opening to the breast.
  • The caul or web fat are removed.
  • A cut is made around teh bung and loosened.
  • The thymb and finger are inserted and the loosened bung is graspped.
  • The ureters that lead to kidneys are severed.
  • The stomach and intestines are now easily pulled and the bile duct is removed form the liver.
  • The chest is splitted with a knife or saw and the pluck is removed.
