16 (A) - MEAT PICKING MACHINE

MEAT PICKING MACHINE

Aim:
To separate meat from the fish and measure the power transmission elements of a meat picking machine.

Apparatus:
  1. Measuring scale
  2. Outside and inside caliper
  3. Tachometer
  4. Thread (Nylon)
Working principle: Meat picking is the first step in the preparation of fish product to separate meat from the other inedible parts. This is done by meat picking machine. In its working mechanism the power from the electrical motor (driving pulley) is transmitted to the driven pulley by means of ‘V’ belt. The driven pulley has a center shaft with helical gear at the end to rotate another helical gear with projected cam. This projected cam has in contact with the roller arm. The roller arm gives jerk movement to the perforated disc by lever and ratchet mechanism. The projected cam on the helical gear has center shaft on which eccentric cam is fixed with the bell crank to give reciprocating motion to the square shaft connected with synthetic rubber pad to press the fish on the perforated disc.

Procedure:
  • Switch on the electrical motor before starting the work.
  • Put the dressed fish on the perforated disc.
  • Collect the meat below the perforated disc.
  • Collect the debonised material from the scraper.
  • Switch off the machine.
  • Clean the perforated disc, scraper and rubber pad with detergent and water.
Precaution: The gap between the rubber pad and the perforated disc should be adjusted before operating the machine. More gap lesser yield, less gap small bones, skin and other parts are pressed into the picked meat.

Observations: Following observations have to be recorded.
