CONTINUOUS COOKER AND COOLING MACHINE

Aim:
To cook and cool the sausages and record the power transmission elements, other parameters of a machine.

Apparatus:
  1. Set of sausage casings
  2. Measuring scale
  3. Outside and inside caliper
  4. Tachometer
  5. Thread (Nylon)
Working principle: The continuous cooker and cooling machine is used to cook and cool the sausages. The continuous cooker and cooling machine has 40 perforated boxes and each box will hold 30-40 sausages. It has also 3 tanks i.e., hot water, cold water and reboiling tank for cooking, cooling and for removal of wrinkles. In its working principle the power and motion from the electrical motors (i.e. driving shaft pulley) is transmitted to the driven pulleys by means of belt conveyor systems. The conveyor belt carries the perforated steel boxes loaded with casings is passes through three different tanks. As the conveyor belt moves with casing on wire mesh, a blowers blows air over the sausages for cooling and drying the products. The cooled products will be stored in the cold storage.

Procedure:

  • Switch on the electrical motor before starting the work.
  • Put the sealed casings in the perforated box.
  • Take out the cooked and cooled casings.
  • Switch off the machine.
