Classification of Spices and Condiments

  • The list of botanical and English names of 63 spices classified by the Bureau of Indian Standards (BIS) and the ISO as officially recognized spices and condiments is given in Table 1. The table also covers the part of the plant that is used as a spice or condiment, its botanical and common English names as well as its name in Hindi.
  • There are as many as 86 important spices and condiments, officially recognized by both the ISO and the BIS. The BIS holds the ISO Secretariat for 'Spices and Condiments' on behalf of the Government of India. The ISO has now approved 86 spices that have been published in an ISO document. There are over 190 ISO Technical Committees (TCs). Of these, TC 34 sub-committee 7 deals with the formulation of International Standards (ISO) for individual spices, spice mixtures (curry powder), their processed products like their essential oils and oleoresins as well as their methods of testing. These standards cover physical, chemical and microbiological parameters of both whole and ground spices.
