1.1.1. Introduction
Several food preservation techniques were evolved in order to enable man to use food produced at various places from age old times. Such methods of preservation of food are sun drying, salting, keeping food in ice, smoking etc. Fish is a highly perishable commodity as it contains good amount of nutrients and hence there is a greater need to preserve it. Without preservation it is impossible to transport and distribute fish to interior places in good condition. |
