U.V. radiations have harmful effects on many products particularly on certain foods. These effects can be greatly reduced by the addition of U.V. Scruning agents. These scrumming agents act by absorbing or reflecting the U.V. radiation U.V Scruning is achieved either by pigments or by colorless organic compounds that absorb radiation (Eg. para amino benzoic acid or henzocaine)
