Lesson 16 : Toxicity of Nutrients

Micronutrients

To understand vitamin toxicity, it is important to differentiate between fat-soluble vitamins (A, D, E, and K) and water-soluble vitamins (B and C). As fat-soluble vitamins have the ability to be stored in body fat depots, excessive intakes of such vitamins may result in their accumulation and accompanying toxic effects. More often, large or excessive consumption of water-soluble vitamins results in more body excretion of the compound, more in the urine and sweat. However, research over the past couple of decades has shown that serious side effects can be associated with excessive intakes of water-soluble vitamins also.
