Machinery
The freezing capacity shall be adequate to meet the production in peak season. The type of freezing used shall be specific to the nature of product and type of pack. For this purpose, the plate freezer, the blast freezer or individually quick freezing machinery shall be used depending upon the requirement of the product. The material shall be quick frozen.In the case of block freezing, the time taken to attain minus 30o C at the core of the block 2.5 cm thick shall not exceed 90 minutes.The freezing equipment shall be fitted with gauges to show the temperature and pressure. |
