Estimation of Iodine number of fat

Iodine value:Iodine value is defined as the number of g of iodine absorbed by 100 g of fat/oil. It will give the degree of unsaturation of the fatty acid present in the fat. It is constant for oil or fat. It is a useful parameter for studying oxidative rancidity of oils since the higher the unsaturation the grater the possibility of rancidity.

                                                Principle

  • A quantity of oil or fat is reacted with a measured amount of iodine.
  • The amount of iodine left at the end of the reaction is measured to calculate the amount of iodine absorbed.
  • The higher the amount of unsaturation the more the iodine is absorbed.
  • Therefore higher the iodine value greater the degree of unsaturation.
