BACKING
  • The hide attached to the outside round (leg) is either pulled or pounded off.
  • The backing operation consists of running the knife around the back between the hide and the carcass and letting the hide drop of its own weight.
  • The hide may also be removed by cutting in from either side as a completion of the siding operation.
