Preparing to bake

Before the product is baked in the oven, it is prepared for baking to enhance sensory qualities. Depending on the product, preparation may include topping with fruits/ nuts,spraying or brushing with egg wash or milk for shine, spraying or brushing water to get a tough and chewy crust, docking to create passages for steam release, dusting flour or cocoa or coffee for a rustic look
