Quality of Macaroni Products

Characteristics of good macaroni products are

  1. The best macaroni products are smooth, translucent, hard, brittle and elastic and have rich amber color.
  2. Long pieces, particularly spaghetti are pliable and capable of standing considerable bending without breaking.
  3. Good products absorb water and swell three to four times the original volume, retain the shape and certain firmness and develop appetizing odour. Macaroni products do not loose their quality on storage for prolonged periods.
