Nutritional and health benefits of pulse and legume based mixes

  1. The legume and pulse based mixes are low in sulphur containing amino acids (SAAs) in contrast to animal proteins. So they help for retaining of calcium in body.
  2. Legume starches are prone to retro gradation and development of resistant starch contributes to the low blood glucose and insulin responses that follow the digestion.
  3. Pulse based mixes have high fibre both soluble and insoluble that lower serum cholesterol. They have low glycemic indices.
  4. Phytic acid present in pulses may reduce cancer risk due to antioxidant effects. They reduce the risk of colon cancer and breast cancer.
