Lesson 26 : Managing food services in the center

Introduction

The entrepreneur ultimately is responsible for the center’s food service and health and safety programs, despite the fact that the components of these programs may be the immediate responsibility of assigned staff members. In large programs, a nutritionist and or food service coordinator and a cook, may have full responsibility for the center’s food service, but the director should be knowledgeable about the program and is accountable to the board, the funding agencies, and the center’s families.
