EXPERIMENTS WITH ENZYMES - PTYALIN

  • Ptyalin is the salivary amylase present in man and pig acts on starch and certain polysac­charides at alpha 1 - 4 glucosidic linkage, the principal product is the maltose.
  • Chloride ions are essential for its activity.
  • The optimum pH of 6.7 is required for its activity.

Source of Ptyalin

  • Rinse the mouth thoroughly with 20 ml warm water at least a minute.
  • Collect the content in a conical flask and mix well and filter.
