STYLES OF DRESSING AND YIELD

Shipper’s style

  • Unsplit carcass with head on and leaf fat in.
  • Yield -74 to 76%

Packers’ style

  • Two sides with jowl attached, but head removed and leaf fat out.
  • Yield -68 to 70%.

Farmers’ style

  • Carcass split on either side of the back bone making two sides and back bone.
