PROPERTIES OF TOXICOLOGICAL IMPORTANCE

• Aflatoxins are polycyclic unsaturated compounds.
• They consist of a coumarin nucleus.
• Relatively heat resistant and not soluble in water.
• They are extractable in organic solvents.
• Addition of fungicidal drugs can prevent the growth of the mold. But, will not destroy already developed mold.
• Ammoniation is helpful, but, is not an approved procedure.
