Analysis of Total Free and Protein Bound Sugars by Spectrophotometer

Carbohydrates are one of the minor components present in fish, shellfish and molluscs. They exist as free sugars and bound sugars. The basic units of carbohydrates are the monosaccharides, which cannot be split by hydrolysis into simpler sugars. The total carbohydrates are therefore estimated by hydrolyzing the polysaccharides into simple sugars by acid hydrolysis and analyzing the resultant monosaccharides.
