Principle

The disaccharides, oligosaccharides and polysaccharides are hydrolyzed into monosaccharides, which are then dehydrated into furfurol or furfurol derivatives in the presence of sulfuric acid present in the Anthrone reagent. Furfurol and furfurol derivatives in reaction with a number of phenolic compounds ie, Anthrone, then produce a complex green colored product.. The amount of sugar present is proportional to the intensity of the colored product, which is having an absorption maximum at 630 nm.
