Lesson 03 :Food Sampling

Important considerations for food sampling are

  • Moisture content of the samples which affects the sample heterogeneity during sampling procedures, since virtually all foods are heterogeneous in part because it affects the extent of sample.
  • The postmortem or postharvest physiological changes which affect the fresh food after it is sampled and which can result in sample heterogeneity.
  • Minimizing the sample variability using proper sampling. Sample pretreatment is important since there will be a great variability even between the samples that derive from same breed or strain in terms of physical and chemical composition.
