8.2.3 Chemical hazards-analysis

Presence of a chemical may not always be a hazard. The amount of chemical present is important, Regulatory limits are set for some of these chemicals.

Chemical hazards belong to 3 groups

i. Naturally occurring chemical hazards

  • Scombroid (histamine) poisoning
  • Ciguatoxin
  • PSP / DSP

ii. Unintentionally added chemical

  •  Pesticides
  • Fungicides
  • Toxic elements

iii. Intentionally added chemical

  • Antibiotics -Aquaculture
  • Sulphites  -Melanosis control
  • Nitrites -Preservatives
  • Detergents -Cleaning
  •  Colouring agents -For bright colour
  • Antioxidants -prevention of rancidity

 Among the Naturally occurring chemical hazards Histamine production is significant in scombroid fishes.
