Presence of a chemical may not always be a hazard. The amount of chemical present is important, Regulatory limits are set for some of these chemicals. Chemical hazards belong to 3 groups i. Naturally occurring chemical hazards
ii. Unintentionally added chemical
iii. Intentionally added chemical
Among the Naturally occurring chemical hazards Histamine production is significant in scombroid fishes. |
