Canned convenience foods

Traditional Indian foods like upama, halwa, paratha, subji, dal curries, idli, kheer, pulav and pea paneer curry are thermally processed in cans for supply to troops.

  • The products have a shelf life of one year.
  • Since lengthy heating is needed for heat penetration the sensory quality of foods and nutritive value are affected.
  • Idli’s can be canned with sambar, if individual idli is coated with fried bengal gram powder it can be stored for a six months period.
