Introduction

Cereals are the fruits of cultivated grasses, members of the monocotyledonous family Gramineae. The main cereal crops are wheat, barley, oats, rice, maize, sorghum and the millets. The convenience food market has witnesses a rapid growth all over the world. In India, grain based snack foods are prepared by the housewives or by food service establishments, marketed by food processing industries.
