Lesson 4 : Convenience Foods Of Minor Millets

Extruded products

  1. Millets such as sorghum and pearl millet are used in preparation of roller dried extruded products.
  2. The millet flours are mixed with legumes and wheat flour to get acceptable extruded products.
  3. The noodle or vermicelli like extruded products are used in soup or stew.
  4. Traditionally fried product based on extrusion principle such as “muruku and chakkli” can be prepared using flour of minor millets along with chickpea flour.
  5. Starch can be extracted from millets and utilized as thickeners for ready mixes such as soups.
