3.2.5.5.Continuous type retorts
These are similar to the equipments used for pasteurization of acid foods. In these equipments the conveyors of cans do not pass through hot water tanks instead low acid food cans pass through steam under pressure in box like structure. There are valves to control the entry and exit of cans. The process time is controlled by the speed of the conveyor.
