3.2.17. Composition and metabolism of dark and white muscle

• The inorganic composition of Atlantic salmen muscle –Las low Na and Cl^- and high K⁺.
• Light muscle is characterized by high levels of glycogen dark muscle has high levels of lipids.
• In fish blood, lactate is 200mg/100ml blood – the muscle lactate which remains inside the muscle cells can be oxidized
• Lactate appeared in urine during high levels of blood lactate.
• Loss of lactate across the gill also possible.
